Proses kristalisasi umum digunakan di dunia industri. Pada industri gula, kristalisasi digunakan untuk mengekstrak kristal sukrosa yang terlarut dalam larutan nira. Proses kristalisasi terjadi pada stasiun pemasakan. Proses kristalisasi membutuhkan design pemasak (pan) dan operasi yang benar. Pada pemasak, banyak parameter yang mempengaruhi kualitas kristal yang diproduksi seperti bentuk pemasak, dimensi pipa pemanas, dan lebar downtake. Pabrik Gula Tersana Baru menggunakan pemasak tipe Connical Enlargement Fixed Flat Plate Calandria Pan with Connical Bottom. Pemasak tipe connical enlargement memberikan dampak buruk terhadap sirkulasi bahan masak dalam pemasak sehingga distribusi temperatur tidak merata. Penggunaan pemasak tipe Straight Sides Fixed Flat Calandria Pan with W Shape Bottom mulai banyak digunakan sejak memberikan dampak posistif terhadap sirkulasi bahan masak. Computational Fluid Dynamic digunakan untuk melakukan analisis terhadap sirkulasi bahan masak dalam pemasak. Penambahan sub cooling systems pada sisi shell memberikan dampak positif terhadap lebih banyak energi uap pemanas yang diserap. Adanya sub cooling systems dapat menghemat penggunaan energi uap pemanas sebesar 1.114,83 MJ per batch akibat penghematan penggunaan uap pemanas. Jika, diekuivalenkan dengan penghematan penggunaan steam boiler maka, dapat menghemat Rp 137.070,00 per batch. Kata kunci: kristalisai, sirkulasi, sub cooling systems.
Deskripsi Alternatif :The crystallization process is commonly used in the industrial world. In the sugar industry, crystallization is used to extract sucrose crystals that are dissolved in the cane juice. The crystallization process occurs at the cooking station. The crystallization process requires the design of the cooking pan and the correct operation. In the cooker, many parameters affect the quality of the crystals produced such as the shape of the cooking pan, the dimension of the heating pipe, and the width of the downtake. The Tersana Baru Sugar Industry uses a Connical Enlargement Fixed Flat Plate Calandria Pan with Connical Bottom cooking pan. The connical enlargement type cooks adversely affect the circulation of cooking ingredients in cooking pan so that the temperature distribution is uneven. The use of Straoght Sides Fixed Flat Plate Calandria Pan with W Shape Bottom is widely used since it has positive effect on the circulation of cooking ingredients. Computational Fluids Dynamic is used to analyze the circulation of cooking ingredients in a cooking pan. The addition of sub cooling systems to the shell side has a positive impact on the more heating steam energy absorbed. The existence of sub cooling systems can save the use of heating steam energy by 1.114,83 MJ per batch due to savings in the use of heating steam. If, it is equivalent to saving steam boiler, it can save Rp 137.070,00 per batch. Keywords: crystallization, circulation, sub cooling systems.
