Forget Me Not Coffee merupakan perusahaan yang bergerak di bidang makanan dan minuman dengan spesialisasi minuman olahan kopi. Dalam pelaksanaan kegiatan operasionalnya, sebuah kedai kopi ditunjang dengan hadirnya Barista. Saat bekerja, Barista harus menyelesaikan kegiatan opening terlebih dahulu sebelum membuka kedai di jam buka operasional untuk selanjutnya memasuki kegiatan running. Begitupula, kegiatan closing dapat dilakukan apabila sudah memasuki jam tutup operasional dan berakhirnya kegiatan running. Barista sering melakukan kesalahan dalam kegiatan opening seperti terlambat melakukan start shift, sering terjadi perbedaan standar pada pembuatan produk yang menyebabkan perbedaan rasa, dan lupa mengepel kedai saat kegiatan closing. Tidak adanya prosedur tertulis pada kegiatan opening, running, dan closing mengakibatkan Barista menjadi tidak efektif dan efisien dalam segi waktu dan tenaga. Tujuan dari proyek ini adalah menyusun prosedur tertulis sebagai upaya untuk mengatasi masalah yang sering terjadi. Pembuatan Standard Operating Procedure (SOP) nantinya akan mempermudah Barista dalam melakukan setiap pekerjaannya dan dapat meminimalisir terjadinya kesalahan dari prosedur yang dilakukan. Metode proyek berupa penyusunan SOP kegiatan opening, running, dan closing di Forget Me Not Coffee menggunakan metode penulisan bagan arus (flowchart) dan instruksi kerja dengan hasil pengamatan serta wawancara yang dilakukan terhadap Pemilik dan Manajer dari Forget Me Not Coffee. Hasil proyek berupa SOP dan instruksi kerja yang telah diuji coba kepada Barista. Hasil dari uji coba SOP yang dilakukan kepada Barista menunjukan bahwa Barista dapat memahami sepenuhnya langkah yang harus dilakukan atau prosedur kerja pada saat melakukan kegiatan opening, running, dan closing. Proyek ini menghasilkan output berupa buku panduan SOP mengenai kegiatan opening, running, dan closing yang dapat dijadikan panduan oleh Barista di Forget Me Not Coffee dan laporan penyusunan SOP. Forget Me Not Coffee is a company in the food and beverage sector, specializing in processed coffee drinks. In carrying out its operational activities, a coffee shop is supported by the presence of a Barista. While working, the Barista must complete the opening activities before opening the shop during operating hours to enter running activities. Likewise, closing activities can be carried out when operating closing hours have entered and running activities have ended. Baristas often make mistakes in opening activities such as being late in starting shifts, often having different standards in product manufacture that cause different flavors, and forgetting to mop the shop during closing activities. The absence of written procedures for opening, running, and closing activities causes the Barista to be ineffective and inefficient in terms of time and energy. The purpose of this project is to develop written procedures in an effort to overcome problems that often occur. Making Standard Operating Procedures (SOP) will make it easier for Baristas to do their work and can minimize the occurrence of errors from the procedures carried out. The project method is in the form of preparing SOP for opening, running, and closing activities at Forget Me Not Coffee using a flowchart writing method and work instructions with the results of observations and interviews conducted with the Owners and Managers of Forget Me Not Coffee. The project results are in the form of SOP and work instructions that have been tested on Baristas. The results of the SOP trial conducted on the Barista showed that the Barista could fully understand the steps that must be taken or work procedures when carrying out opening, running, and closing activities. This project produces an output in the form of an SOP manual on opening, running, and closing activities that can be used as a guide for the Barista at Forget Me Not Coffee and a report on the preparation of SOP.
